Meghalaya Cuisine: A Culinary Journey Through Traditional Food and Dishes

Traditional Foods of Meghalaya

Jadoh

Jadoh is a beloved dish among the Khasi tribe of Meghalaya. This flavorful rice dish is cooked with pieces of pork, green chilies, onions, ginger, and turmeric. The name "Jadoh" comes from "Ja," which means rice, and "Doh," which means meat.

Dohneiiong

Kyat

Authentic Recipes of Meghalaya Cuisine 

Recipe for Jadoh:

Ingredients:

2 cups of rice

500 grams of pork, cut into small pieces

2 onions, finely chopped

2-3 green chilies, chopped

1-inch piece of ginger, grated

1 teaspoon turmeric powder

Salt to taste

2 tablespoons mustard oil

Water as needed

Instructions:

1. Heat mustard oil in a large pan.

2. Add chopped onions, green chilies, and grated ginger. Sauté until the onions turn golden brown.

3. Add the pork pieces and cook until they are browned on all sides.

4. Add turmeric powder and salt, stirring well.

5. Add rice and mix thoroughly with the pork and spices.

6. Pour in enough water to cover the rice and meat mixture. Bring to a boil.

7. Reduce the heat to low, cover the pan, and let it simmer until the rice is cooked and all the water is absorbed.

8. Serve hot, garnished with fresh coriander leaves.

Recipe for Dohneiiong:

Ingredients:

500 grams of pork, cut into cubes

2 onions, finely chopped

3-4 green chilies, slit

1-inch piece of ginger, grated

4-5 cloves of garlic, minced

2 tablespoons black sesame seeds, roasted and ground

1 teaspoon turmeric powder

1 teaspoon black pepper powder

Salt to taste

2 tablespoons mustard oil

Water as needed

Instructions:

1. Heat mustard oil in a pan and sauté the chopped onions until golden brown.

2. Add the grated ginger, minced garlic, and slit green chilies. Cook for a few minutes until aromatic.

3. Add the pork cubes and cook until they are browned on all sides.

4. Add turmeric powder, black pepper powder, and salt. Mix well.

5. Add the ground black sesame seeds and stir to coat the pork pieces.

6. Pour in enough water to cover the pork. Bring to a boil, then reduce the heat and simmer until the pork is tender and the sauce has thickened.

7. Serve hot with steamed rice.

Recipe for Dohkhleh:

Ingredients:

500 grams of pork (preferably pork belly)

2 medium-sized onions, finely chopped

3-4 green chilies, finely chopped

1-inch piece of ginger, grated

2-3 cloves of garlic, minced

Fresh coriander leaves, chopped

Juice of 1-2 lemons

Salt to taste

Pepper to taste

Instructions:

1. Boil the Pork:

o Place the pork in a large pot and cover it with water.

o Add a pinch of salt and bring the water to a boil.

o Reduce the heat and let it simmer until the pork is tender and cooked through,        about 30-40 minutes.

o Once cooked, remove the pork from the water and let it cool.

o Cut the cooled pork into small bite-sized pieces.

2. Prepare the Salad:

o In a large bowl, combine the chopped onions, green chilies, grated ginger, and minced garlic.

o Add the chopped pork pieces to the bowl.

o Squeeze the lemon juice over the mixture and season with salt and pepper to taste.

o Toss everything together until well combined.

3. Garnish and Serve:

o Garnish the Dohkhleh with freshly chopped coriander leaves.

o Serve immediately as a side dish or starter.

Meghalaya Local Cuisine: Must Try Dishes 

1. Nakham Bitchi: A spicy and tangy soup made with dry fish, usually served as a starter.

2. Tungrymbai: A fermented soybean paste cooked with pork and spices, offering a unique taste experience.

3. Pumaloi: A steamed rice cake, often enjoyed with tea or as a side dish.

4. Minil Songa: Sticky rice wrapped in leaves and steamed, a popular snack among the Garo tribe.
